Bombom (Plateau) refers to the higher plateau above the Bombom settlement in the Mé-Zóchi district, at about 500 meters elevation in the foothills of Pico de São Tomé. The cool, damp air and mineral-rich volcanic soils make the region one of the best growing areas for high-quality organic coffee, Arabica and Bourbon varieties thrive here in shaded cultivation under old breadfruit and Erithrina trees. Farmers of the local cooperative sell their hand-picked, fermented and sun-dried coffee directly to specialty roasteries in São Tomé, Lisbon and Porto. Architecturally noteworthy are the plateau's traditional houses: built from pau-d'óleo wood on stilts, with wraparound verandas and decorative carvings above the door lintels. Trails climb from the plateau into the cloud forests of the midlands, with viewpoints toward Pico Maria Fernandes and the distant phonolith towers.
