Cafayate is the center of wine production in the Calchaquí Valley, situated at an altitude of 1683 meters above sea level. The dry, sunny climate and the high-altitude environment of the region provide good conditions for viticulture. The city is particularly known for the local, aromatic white wine, Torrontés. In the center and on the surrounding estates (bodegas), visitors have the opportunity to learn about the winemaking process and taste local vintages, often directly with the producers. North of the city, along Route 68, lies the Quebrada de las Conchas, a deep gorge famous for its unconventional red sandstone formations. The rocks, shaped by wind and water erosion, have created unique structures such as the Amphitheater with its excellent acoustics or the Devil's Throat (Garganta del Diablo). These geological formations are among the main attractions for travelers coming from Salta and can also be explored on foot. Artisan shops are clustered around the central square of the settlement, selling local ceramics, textiles, and products made from llama wool. Local restaurants often serve traditional northern dishes alongside the wines, including artisanal ice cream flavored with wine. The well-suited time to travel is March, when the harvest festival (Vendimia) is held, as well as autumn and spring, avoiding the summer heat.
