Salt has been harvested here using traditional methods for over 700 years, utilizing a special layer of microorganisms called 'petola' on the floor of the salt pans. This ancient technique ensures the exceptional purity and quality of the salt, particularly the 'fleur de sel', which is globally renowned. The park is divided into two areas: Lera, where salt production remains active, and Fontanigge, which houses a salt-making museum in restored laborers' houses. The salt pans provide a sanctuary for over 270 bird species and serve as a critical stopover for migratory birds. The hypersaline environment also supports specialized halophytic plants that have adapted to extreme salinity levels.
