This pastoral tradition remains essential today, providing the milk for the world-renowned Roquefort cheese, which is aged in nearby caves. Since 2011, the Larzac has been listed as a UNESCO World Heritage site as part of the Causses and Cévennes cultural landscape. The sparsely populated area serves as a significant sanctuary for birds of prey and rare orchid species.
