Estancia Caroya was established in 1616 as the first Jesuit ranch in the Córdoba region, primarily to support the Convictorio de Monserrat. The architectural layout features a rectangular structure surrounding a central cloister, showcasing a blend of Renaissance and Baroque elements. During the War of Independence in the early 19th century, the estate gained strategic importance as Argentina's first factory for bladed weapons (Fábrica de armas blancas), supplying sabers and bayonets to the Army of the North. National heroes such as Generals Manuel Belgrano and José de San Martín stayed here during their campaigns. Later, in 1878, the estancia served as the initial landing point for Italian immigrants from the Friuli region, which permanently shaped the local culture. Today, it is a museum and a UNESCO World Heritage site, documenting the site's rich history from colonial times to the waves of immigration.
