Coronel Bogado, a town in the Itapúa Department of southern Paraguay, lies about 50 kilometres north-west of Encarnación along Route 1, the highway linking Asunción to the Argentine border. It is widely known as the Capital Nacional de la Chipa, the national capital of chipa, since this traditional corn-flour bread with cheese and anise, a staple of Paraguayan cuisine, is baked here to a particularly fine standard and passed down through generations. The town traces back to an early-nineteenth-century settlement and was officially founded in 1845 under the name Paraje Ka'i Puente; it was renamed in honour of Colonel José María Bogado, a hero of the War of the Triple Alliance. With around 25 000 inhabitants Coronel Bogado relies mainly on agriculture, cattle ranching, rice cultivation and its renowned bakery tradition. Every year it hosts the National Chipa Festival, a three-day event with music, dance and competitions for the best chipa, drawing visitors from across the country.
