Aigues-Mortes is a monumental example of medieval engineering on the edge of the Camargue. Founded in the 13th century by King Louis IX (Saint Louis), it served as the first French port on the Mediterranean and the departure point for two Crusades. Its 1.6-kilometer ramparts are preserved almost entirely in their original state, encircling the grid-patterned town center. The massive Constance Tower, once a state prison, dominates the northwestern corner of the fortifications. Just outside the walls lie the 'Salins du Midi,' vast salt pans where the water shimmers in bright pink hues due to specific microorganisms. The region is renowned for its rich wildlife; white Camargue horses, black bulls, and flocks of pink flamingos are native to the area. Inside the walls, narrow streets are filled with boutique shops and restaurants offering local delicacies. Culinary highlights include the 'Fougasse d'Aigues-Mortes,' a sweet brioche flavored with orange blossom, and 'gardiane de taureau' (bull stew). The town's proximity to the beaches of Le Grau-du-Roi makes Aigues-Mortes a great blend of cultural exploration and seaside relaxation.
