The Messolonghi-Etoliko Lagoon is the largest lagoon system in Greece and a wetland of international importance protected by the Ramsar Convention. Located on the northern shore of the Gulf of Patras, it was formed by the sediment deposits of the Acheloos and Evinos rivers over thousands of years. The shallow waters have supported traditional fishing practices since antiquity, characterized by unique wooden fish traps known as 'Ivaria.' The region is world-renowned for its production of avgotaracho (bottarga), a gourmet delicacy made from the salted and dried roe of the flathead grey mullet. Ecologically, the lagoon is a biodiversity hotspot, hosting over 200 bird species, including greater flamingos and the rare Dalmatian pelican. The surrounding salt pans are responsible for a large portion of Greece's salt production, with their white salt mounds defining the local horizon. The historic town of Messolonghi, pivotal during the Greek War of Independence, sits at the edge of this vast and lively ecosystem.
