Villefranche-de-Lauragais, located in the Haute-Garonne department, is an exemplary "bastide" town founded in 1252 by Alphonse de Poitiers. The town's layout features the distinct grid pattern typical of medieval bastides, leading to a central square bordered by elegant arcades. One of its architectural highlights is the Église Notre-Dame-de-l'Assomption, a massive brick structure boasting a striking "clocher-mur" (bell-gable) characteristic of the Toulouse region's Gothic style. Historically, the town prospered greatly during the Renaissance due to the lucrative trade of pastel (woad), a plant used for blue dye, earning the surrounding area the nickname "Pays de Cocagne." Today, the town remains a lively agricultural hub, famous for being situated right in the heart of the cassoulet region. Culinary enthusiasts often stop here to sample authentic interpretations of this hearty bean and meat stew. Geographically, it is located near the Canal du Midi, offering scenic cycling and boating opportunities just a short distance away. With its warm red-brick facades and animated Friday market offering rich local produce, Villefranche-de-Lauragais is a deeply historical and culturally rich destination excellent for slow tourism and gastronomy lovers.
