Castelnaudary is located in the Occitanie region within the Aude department and is inextricably linked to two hallmarks: the Canal du Midi and Cassoulet. Founded in the Middle Ages, the town was a significant center in the land of the Cathars. With the construction of the Canal du Midi in the 17th century, Castelnaudary experienced a massive economic boom due to the creation of the 'Grand Bassin', the canal's largest water reservoir and a technical masterpiece by Pierre-Paul Riquet. The town became the most vital port between Toulouse and the Mediterranean. Culinarily, Castelnaudary claims the title of the world capital of Cassoulet, a rich stew made of white beans and meat, prepared here according to strict local traditions. Geographically, the commune lies in the Lauragais region, a fertile plain often referred to as the 'granary of Languedoc'. The town's architecture, featuring terracotta tile roofs and historic windmills on surrounding hills, reflects the wealth of its agrarian past.
