Its most prominent architectural landmark is the 'Tour Sarrasine', a remnant of the medieval walls that once stood guard over the Languedoc plains. Cournonterral is famous across France for its wild and ancient 'Pailhasses' carnival, held annually in February. This unique ritual involves participants stuffing their clothes with straw and engaging in a battle with wine lees and mud, a tradition that dates back to a local conflict in 1346. Agriculture, specifically viticulture, remains the backbone of the local economy, with the surrounding vineyards producing acclaimed AOC Languedoc wines that benefit from the warm Mediterranean sun.
