Tucked away in the scenic Dore valley within the Parc Naturel Régional Livradois-Forez in the Puy-de-Dôme department, Ambert is a delightful town renowned for its unique circular architecture and deep-rooted artisanal traditions. Its most famous export is the Fourme d'Ambert, a mild and creamy blue cheese with a characteristic cylindrical shape that has been produced in the region since Roman times; visitors can discover the secrets of its production at the Maison de la Fourme d'Ambert. The heart of the town is dominated by an unusual, perfectly circular town hall (Mairie), originally built as a grain market in the 19th century, surrounded by medieval half-timbered houses and narrow, winding streets. Just a few kilometers from the center lies another cultural treasure: the Moulin Richard de Bas. This fully operational 15th-century paper mill functions as a living museum, where visitors can watch artisans craft high-quality paper by hand using traditional techniques, a craft that once supplied the finest printing houses in Europe. The surrounding pristine forests and rolling hills of the Livradois-Forez offer endless opportunities for hiking and mountain biking, making Ambert an excellent destination for those looking to immerse themselves in authentic Auvergne culture, distinct local gastronomy, and unspoiled natural beauty.
