Hierve el Agua
Hierve el Agua is one of Oaxaca's most visually remarkable destinations, consisting of two 'petrified' waterfalls formed over millennia. These formations were created by mineral-rich spring water trickling down the cliffs, leaving behind thick deposits of calcium carbonate. At the top of the cliffs, natural 'infinity pools' filled with cool mineral water allow visitors to soak while enjoying panoramic views of the Mitla Valley. The site features hiking trails that lead down to the base of the falls, providing a different perspective of the massive white rock structures. This area was sacred to the Zapotec people, who built a sophisticated irrigation system here over 2,500 years ago. Gastronomy at the site consists of small stalls serving local favorites like quesadillas and mezcal cocktails. The best time to visit is early morning to avoid the crowds or during the rainy season when the springs are most active. Located in a remote mountainous area, it is typically visited as a day trip from Oaxaca City. It is a true paradise for photographers, geologists, and history buffs alike.
