La Carolina, in the province of Jaén, is a town with a unique heritage. Founded in the 18th century under King Charles III, it was designed on a rational, neoclassical grid plan that is still visible today. This urban experiment was part of a plan to populate the Sierra Morena with Central European settlers. The town also has a significant mining history, documented at the Mining Museum. La Carolina's gastronomy is typically Andalusian. Specialties include game dishes, 'pipirrana' (a refreshing salad), and olive oil from the region. Local pastries, especially 'pestiños', are also popular. The town is located on the A-4 motorway, connecting Madrid with Andalusia, making it easily accessible. It serves as a gateway to the Despeñaperros and Sierra de Andújar natural parks, known for their dramatic landscapes and Iberian lynx population. Spring and autumn are the best times to visit, with pleasant temperatures well-suited for exploring the town and the nearby natural parks. The summer can be very hot.
