Guadix, located in the province of Granada, is one of the oldest human settlements in Spain. Its most distinctive feature is the Barrio de las Cuevas, Europe's largest cave-dwelling complex, with some 2,000 caves still inhabited today. Visitors can explore this fascinating neighbourhood and even stay in a cave hotel for a truly unique experience. The city also has an impressive monumental heritage, including the Guadix Cathedral, built on the site of a former mosque and featuring a mix of Gothic, Renaissance, and Baroque styles, and the Alcazaba, an 11th-century Moorish fortress offering panoramic views over the town and the Sierra Nevada. The gastronomy of Guadix reflects its Andalusian and Berber roots. The cuisine is hearty and based on local products. Specialties include 'Olla de San Antón' (a hearty bean and pork stew), 'Migas' (fried breadcrumbs with chorizo and peppers), and various game dishes. Summer can be extremely hot, although the cave dwellings provide natural coolness. Winter can be cold, but the sight of the snow-capped Sierra Nevada in the distance is a reward in itself. The city is also known for its lively festivals, especially the Cascamorras in September, a colourful and chaotic festival declared of National Tourist Interest.
