The city is world-famous for its chocolate, produced using a cold process without cocoa butter, a method the Spaniards adopted from the Aztecs in the 16th century. Besides chocolate, Modica provides a rich gastronomy with dishes like 'Mpanatigghi', meat pies with a chocolate filling. The surroundings are characterized by deep limestone canyons known as 'Cave'.
