The province of Herat in western Afghanistan is the bustling heart of the nation's saffron production. Known as 'red gold,' the spice is one of the country's most valuable agricultural products and has gained international acclaim for its exceptional quality. Saffron cultivation has a transformative impact in the region, providing a lucrative and legal alternative to opium poppy farming. The process of harvesting the crocus flowers and carefully hand-picking the three red stigmas is extremely labor-intensive and primarily takes place in October and November. This work is predominantly carried out by women, providing them with a vital source of income and economic empowerment. It is estimated that around 150,000 flowers are needed to yield just one kilogram of dried saffron. The export of this precious spice has become a major pillar of the local economy in Herat.
