Today, the village is most famous for its traditional cassava bread production. Visitors can observe the labor-intensive process of grating, drying, and baking the manioc root in large iron pans over open fires. The village itself is characterized by steep, narrow streets that descend toward a small bay where brightly colored fishing pirogues are moored. Unlike the more developed tourist hubs, Canaries gives an unhurried, authentic glimpse into the island's coastal life.
