Each flower yields only three delicate red stigmas, which must be painstakingly hand-picked, explaining why this spice is often called 'red gold'. In 2020, Kashmiri saffron was granted a Geographical Indication (GI) tag, providing international legal protection for its origin and premium quality. The tradition of saffron cultivation in this region dates back over 2000 years and is deeply embedded in the local culinary and cultural heritage. Despite environmental challenges, saffron production remains a vital economic lifeline for thousands of families in Jammu and Kashmir.
