Thuir is a historic town in the heart of Roussillon, located near Perpignan in Southern France. It serves as the primary cultural and economic hub for the Aspres region, a hilly area at the foothills of the Pyrenees. Thuir originated as a medieval fortified settlement, with its circular layout, known as a 'cellera,' still traceable in the old town's streets. The town achieved global fame in the 19th century due to the establishment of the Byrrh cellars by the Violet brothers. This cinchona-based aperitif turned Thuir into a major industrial center for the wine trade. The impressive cellars house the world's largest oak vat, a remarkable feat of traditional coopering. Beyond its viticultural heritage, the town is celebrated for its spirited Catalan culture, evident in its local festivals, cuisine, and architecture. The surrounding landscape is characterized by extensive vineyards and orchards, thriving under the region's Mediterranean climate.

In the morning, we seek shelter under the square's awnings. At noon, the church provides a dry sanctuary for quiet reflection. The afternoon is spent inside the vast, covered halls of Caves Byrrh, keeping us perfectly dry. In the evening, we walk with umbrellas to the chapel as the wet streets of Thuir reflect the dim lights, creating a mystical and cozy atmosphere.
The winter morning starts fresh on the quiet square. We warm up inside the church and enjoy the crisp air. In the afternoon, Caves Byrrh provides a constant, wind-free temperature. As the sun sets behind the Pyrenees around 17:00, we reach the chapel in the magical blue hour light before the nighttime chill sets in.

Midday: Ride through the scenic outskirts of Thuir to reach the imposing Château de Saü, taking in the picturesque countryside along the way. Afternoon: Pedal your way back towards town to explore the quiet Saint-Sébastien Chapel at a leisurely, uninterrupted pace. Evening: End your active cycling adventure with a relaxing ride back to the heart of Thuir as the afternoon sun begins to slowly set over the hills.

Thanks to the car, we stay almost entirely dry today. We start at Byrrh, where we can park right by the entrance. The drive to the remote churches through rainy vineyards is very scenic. At noon and in the afternoon, we enjoy the peace of the sacred buildings while rain drums outside. We end the day in a relaxing way at the central square.
The comfort of a heated car makes the winter tour through the Aspres very pleasant. We start at Byrrh in the morning, enjoying the indoor warmth. The drive to the old churches offers spectacular views of the snowy Pyrenees peaks. Since it gets dark early, we plan the last stop to experience the twilight back in Thuir.
