The city was founded on October 12, 1570, as Villa de la Purísima Concepción de Zalaya. Celaya is widely famous for the production of cajeta, a traditional sweet made from caramelized goat's milk that serves as a vital symbol of local identity. Historically, the city was the site of the decisive Battles of Celaya in 1915 during the Mexican Revolution, where Álvaro Obregón's forces defeated Pancho Villa's army.
